Texas Culinary Academy Announces 2nd Annual Mediterranean Festival

Texas Culinary Academy (TCA) today announced the 2nd Annual Mediterranean Festival will be held at the Austin campus on October 20, 2007, from 10 a. m.-4 p. m. The event will celebrate the traditional cooking of Mediterranean countries while showcasing locally produced products and the talents of Austin-area chefs.

Texas Culinary Academy (TCA) today announced the 2nd Annual Mediterranean Festival will be held at the Austin campus on October 20, 2007, from 10 a. m.-4 p. m. The event will celebrate the traditional cooking of Mediterranean countries while showcasing locally produced products and the talents of Austin-area chefs.

The events will be held in the lobby, demonstration kitchens, labs and the student-run restaurant, Ventana, at the Texas Culinary Academy, located at 114000 Burnet Road, Suite 2100 and are scheduled as follows:

Cooking Demonstrations:
Tagine with TCA Chef M. L. Krasnick, Noon-1p. m. Tapas with TCA Chef Egil Valentin, 1p. m.-2 p. m. Meze with TCA Chefs Rebecca Barsch-Fischer and James Fischer, 2 p. m.-3 p. m.

Student Symposium:
From 11 a. m.-3 p. m, participants can sample an array of Mediterranean foods featuring olives, olive oil, salt, preserved lemons, quince, grains, legumes, spices, marinated cheeses, ice creams, preserved pumpkin and canelés. Participants attending all symposium stations will be entered into a raffle featuring Mediterranean merchandise.

Classes for Adults and Children:
Held from 10 a. m.-4 p. m., these special hands-on classes are a great introduction to regional cuisine. Reservations are required (512.339.3838) and classes are $10 per person; and class size is limited.

Adult Classes will include:
Flatbreads of the Mediterranean, 10 a. m.-11 a. m. Making Fresh mozzarella, 11 a. m.-Noon Making Fresh Pasta, Noon-1 p. m. Making Dolmas, 1 p. m.-2 p. m. Making Spanish Paella, 2 p. m.- 3 p. m. Making Risotto, 3 p. m.-4 p. m.

Children’s Classes will include:
Empanadas, 10 a. m.-11 a. m. Fresh Pasta (Gnocchi and Ravioli), 11 a. m.-Noon Pizza! Noon-1 p. m. Quiche, 1 p. m.-2 p. m. Filo Fun! (Baklava and Spanakopita, 2 p. m.-3 p. m. Ratatouille, 3 p. m.-4 p. m.

Mediterranean Wine Seminars
Held from Noon-3 p. m., the seminars will celebrate wines from the Mediterranean regions of southern France, Spain, and Italy and will be presented by Restaurant Chef Instructor Robert Brady in the school’s restaurant, Ventana. Reservations are required (512.339.3838) and each wine seminar is $10 per person.
